What Color is Your Lunch?

The answer for us most days is green. Here's your summer food pic of the week: a pesto made with spinach, basil, garlic scapes, and pine nuts served on homemade bread. Garlic scapes (the curly green scallions that grow out of garlic heads in the spring) have a nice garlicky bite to them, but are milder than raw garlic (i.e. less offensive breath afterwards). I made this last night to go with our spinach and mushroom lasagna. Very tasty.
Lest you think my lunch today was too healthy, I followed it with a chocolate/caramel/pecan covered rice krispie treat. Woot!
